Asian-inspired soup your way
A girlfriend told me one day that she wanted to bring soup to the office to share with her colleagues. I first thought the idea was quite absurd. I had offered my workmates cookies, muffins, brownies and other sweet yummies. But wait, a soup? It would never have crossed my mind.
After giving it some thought, however, I decided to sharply change tack. After all, nothing tops a deliciously comforting soup to warm the hearts of those who taste it.
You can easily take this hearty soup with you to work. Simply transfer it to Mason jars and bring an extra soup for one of your colleagues. Because spreading happiness feels good too!
- Heat the sesame oil in a skillet. Add the garlic and prawns. Cook until the prawns are nicely coloured, about 2 to 3 minutes. Set aside.
- In a large pot, bring the lactose free milk, lactose free cream, chicken broth, lime leaves, onion, chili and peanut butter to a boil. Lower the heat and gently simmer for 10 to 15 minutes, stirring occasionally.
- Add the mushrooms, bok choy and ramen noodles. Cook for 2 to 3 minutes. Remove from heat. Add a little chicken broth if you like. Season with salt and pepper.
- Serve the soup with a few prawns, garnished with some chopped green onion if you so desire. Bon appétit!
