Creamy Gnocchi with Spring Greens
Quick and simple to make, this gnocchi makes for an easy weeknight meal, but it’s also fancy enough for an impromptu dinner party.
- Fill a large pot with water. Over high heat, bring water to a boil and sprinkle in some salt. Add gnocchi to the water and cook until they float to the top, about a minute or two. Drain and set aside.
- Using the same pot, combine cream, lemon zest, and garlic, if using. Warm over medium heat for 30 seconds to a minute. Add Parmesan cheese and stir to combine.
- Add gnocchi and spinach. Sprinkle in a generous amount of salt (start with ¼ tsp and add more, as needed), pepper, and lemon juice. Stir to wilt the spinach.
- Taste and adjust the seasoning. Top with thinly sliced or shredded Parmesan cheese before serving.
