Creamy Gnocchi with Spring Greens

Quick and simple to make, this gnocchi makes for an easy weeknight meal, but it’s also fancy enough for an impromptu dinner party.


  1. Fill a large pot with water. Over high heat, bring water to a boil and sprinkle in some salt. Add gnocchi to the water and cook until they float to the top, about a minute or two. Drain and set aside.
  2. Using the same pot, combine cream, lemon zest, and garlic, if using. Warm over medium heat for 30 seconds to a minute. Add Parmesan cheese and stir to combine. 
  3. Add gnocchi and spinach. Sprinkle in a generous amount of salt (start with ¼ tsp and add more, as needed), pepper, and lemon juice. Stir to wilt the spinach. 
  4. Taste and adjust the seasoning. Top with thinly sliced or shredded Parmesan cheese before serving.
