6 lb organic whole chicken 2 cups Natrel Lactose Free 2% Juice of 1 lemon 1 tbsp lemon zest ½ tsp crushed coriander 5 fresh sage leaves 1 sprig thyme 1 sprig rosemary 1 cinnamon stick 10 cloves garlic 2 pinches red pepper flakes Sea salt
Freshly ground pepper Honey (optional)
Preheat oven to 375˚F. Clean and dry your chicken and place it in an oven-safe pot with a fitted lid.
Pour Natrel Lactose Free and lemon juice over the chicken and add in all of the spices and herbs. Sprinkle salt, pepper and lemon zest on the chicken. If desired, drizzle the chicken with honey. Place the lid on the pot and cook for 90 minutes or until golden on top and cooked through (internal temperature should be 165˚F).
Remove chicken from bones and serve with lemony sauce at the bottom of the pot.
The bones and pan juices can be used to make delicious stock.
