Milk-Braised Thyme & Dijon Chicken

This chicken is so tender and flavourful you’ll want to eat it every day. The combination of milk, mustard and curry with fresh herbs is the ultimate in comfort food. A meal that’s easy to prepare and guaranteed to impress!


  1. Preheat oven to 350°F (180ºC). In a large Dutch oven (Le Creuset or other) over medium heat, melt 2 tbsp. butter and add olive oil. Brown chicken on all sides to a nice golden colour, about 10–12 minutes total. Remove chicken and set aside on a plate.
  2. Add onion and garlic to Dutch oven and mix well. Cook 3–4 minutes to soften. Add chicken broth, scraping bottom of dish to pull in all the flavours. Place chicken in centre of dish.
  3. In a large bowl, combine milk, ¼ cup Dijon mustard, curry powder and dried thyme. Pour over chicken. In a bowl, beat 1 tsp. melted butter with 1 tsp. Dijon mustard. Brush mixture onto chicken. Top chicken with thyme sprigs, salt and pepper, and sprinkle with herbes de Provence.
  4. Cover, place in oven and cook for approx. 1 hour. Remove cover and cook 15 minutes more or until meat is no longer pink!
