Sweet moroccan-inspired dip

Playing on the floral and nutty flavours of Morocco, this ricotta-based dip is the perfect pairing for figs, grapes, and dried dates.


  1. In a large bowl, whisk the ricotta for a couple minutes until it becomes light and fluffy.
  2. Stir in honey, cream, and all but 1 tablespoon of the pistachios (to use as garnish later).
  3. Transfer to serving bowl, and gently swirl in the apricot jam, taking care not to mix them too thoroughly in order to preserve the lovely ripple it makes.
  4. Garnish with remaining tablespoon of pistachios. Serve at room temperature.
