Sweet moroccan-inspired dip
Playing on the floral and nutty flavours of Morocco, this ricotta-based dip is the perfect pairing for figs, grapes, and dried dates.
- In a large bowl, whisk the ricotta for a couple minutes until it becomes light and fluffy.
- Stir in honey, cream, and all but 1 tablespoon of the pistachios (to use as garnish later).
- Transfer to serving bowl, and gently swirl in the apricot jam, taking care not to mix them too thoroughly in order to preserve the lovely ripple it makes.
- Garnish with remaining tablespoon of pistachios. Serve at room temperature.
