Maple and Blueberry Parfait

Ingredients:

1 vanilla bean, 2 inches (5 cm) long

1 cup (250 ml) Québon Ultra’cream or Sealtest 35% whipping cream

1½ cups (375 ml) fresh blueberries

½ cup (125 ml) maple syrup

¼ cup (60 ml) pecan pieces, toasted

Preparation:

1.

Cut vanilla bean in half, lengthwise, scrape out seeds and add seeds to whipping cream.

2.

In a saucepan, heat 250 mL (1 cup) of blueberries with half of maple syrup and scraped-out vanilla bean for 5 minutes, then remove bean.

3.

Whip cream with remaining maple syrup.

4.

Spoon half the cooled blueberry syrup into small glasses; top with whipped cream. Repeat. Garnish with blueberries and pecans. Serve.

   

Suggestion:  This dessert is also delicious made with ground cherries, fresh apricots, strawberries or pears.
