Pasta and Grilled Garden Vegetable Salad

Ingredients
1 cup (250 ml) Québon Ultra’cream 35% Country Style Cream or Sealtest 35% Whipping Cream
2 tbsp (30 ml) Dijon mustard
1 tbsp (15 ml) chopped garlic flowers
2 tbsp (30 ml) chopped fresh oregano
Salt and freshly ground pepper
4 cups (1 litre) cooked short pasta
12 cherry tomatoes, halved
1 zucchini, cut into thick rounds
1 yellow pepper, cut into thick strips
1 small red onion, quartered
1 small eggplant, thickly sliced
Olive oil

Preparation

In a salad bowl, combine the first 4 ingredients. Salt and pepper generously.

Add pasta and cherry tomatoes.

Preheat barbecue to high.
|

Brush vegetables with a little olive oil and grill. Cool then cut
vegetables into smaller pieces. Add to salad bowl, toss and serve. |
