Chocolate Truffle Snowmen

About 8 snowmen

Ingredients:
1cup (250 ml) 15% Ultra'cream cooking cream or 18% Sealtest cream

16 oz (500 g /16 squares) semi-sweet chocolate

1 tsp (5 ml) vanilla extract

1 cup (250 ml) fine coconut

Garnish of your choice (red licorice, chocolate bits, jujubes ...)

Preparation:

1.

In a saucepan, brin cream to a boil, remove from heat and blend in chocolate until melted.

2.

Stir in the vanilla extract.

3.

Pour into a bowl, cover with plastic wrap leaving a corner open and refrigerate at least 4 hours or until the mixture is firm.

4.

Form balls approximately 3/4 in (2 cm) in diameter, and put them in the refrigerator to harden (approximately 1 hour). 

5.

Roll the balls in the coconut and stack them in threes to form snowmen and place them on a cookie sheet or a plate.

6.

Decorate the snowmen with the garnish of your choice.

7.

Keep refrigerated until ready to serve.

   

Presentation suggestion:  Sprinkle the bottom of a serving plate with icing sugar or coconut flakes and put the snowmen on top.  Make different sized snowmen.
