Berry Summer Delight

Ingredients
3 envelopes (21g) unflavoured gelatin
2.5 cups (625 ml ) cold water
1.5 cups (375 ml) sugar
2 tbsp (30 ml ) lemon juice 2 cups (500 ml) Sealtest or Ultra'cream 35% whipping cream 2 angel food cakes, cubed (8 cups / 2 litres) 2 packages (600 g) choice of frozen berries, thawed
choice of fresh fruit, to decorate

Preparation

In a bowl, combine gelatin and 125 ml (1/2 cup) cold water; let stand 4-5 minutes.

In a saucepan, mix together remaining water and sugar.
|

Bring to a boil.
|
|

Add set gelatin and lemon juice, mixing thoroughly.
|

|
Let cool.
|
|

|
Once mixture resembles egg white, whip cream.
|
|

|
Gently add in gelatin mixture.
|
|
8.
|
Mix in cake and fruit.
|
|
9.
|
Pour into a 2 litre (8 cup) buttered tube pan.
|

10.
|
Chill 24 hours.
|
|
11.
|
Garnish with your choice of fruit.
|

TIP:
Replace frozen fruit with fresh in-season fruit.
