Buttermilk Fruit Cookies

Ingredients
500 ml (2 cups) flour 3 ml (1/2 tsp) baking powder 3 ml (1/2 tsp) salt 125 ml (1/2 cup) shortening 250 ml (1 cup) brown sugar
1 egg 125 ml (1/2 cup) Sealtest or Québon buttermilk 125 ml (1/2 cup) chopped pecans 125 ml (1/2 cup) chopped dates 125 ml (1/2 cup) red and green cherries cut in pieces

Preparation

Preheat oven to 350ºF.

Blend dry ingredients in an average sized bowl: flour, baking powder and salt.

In a large bowl, mix shortening and brown sugar, then add the egg. Whisk into light batter.

Alternately add dry ingredients and buttermilk. Mix thoroughly after each addition.
|

Add the fruits: chopped pecans, chopped dates and precut cherries. Mix.

Use a tablespoon to pour the batter onto a greased cookie sheet.
|

Oven bake 8 minutes or until toothpick pricked to centre of batter is dry when removed. Remove from oven and allow to cool prior to serving.
