Frozen Maple Nougat with Pecans

Ingredients:

1/2 cup (125 ml) pecans, in pieces
1 cup (250 ml) maple syrup
4 egg whites
1-1/2 cups (375 ml) 35% Ultra’cream or Sealtest whipping cream
3 tbsp (45 ml) maple sugar

Preparation:

1.

Preheat oven to 175° C (350° F).

Put the pecans on a baking sheet and place in oven until golden. Set aside.

3.

Pour the maple syrup into a saucepan. Bring to a boil on low heat and cook for 4 to 5 minutes.

Whip the egg whites until soft peaks are formed. Gradually add the boiling syrup and continue whipping for 10 minutes in order to cool the mixture.

5.

Whip the cream and gently fold in the egg white mixture. Add the pecans.

6.

Pour into a terrine or a buttered bread mould or in 6 individual ramekins. Place in freezer for a least 8 hours.

7.

To serve, remove from mould by dipping dish briefly in hot water. Serve immediately. Garnish with slices of orange, pieces of mango or summer berries.
