Cheese and Spinach Quiche

Ingredients
10 oz (284g) package spinach, rinsed and stems removed 1 tsp (5 ml) salt 1/4 tsp (1 ml) pepper
1 garlic clove, minced 1 cup (250 ml) shredded Swiss cheese
Filling:
1 cup (250 ml) milk
2 eggs
2 tsp (10 ml) flour
2 tsp (10 ml) Sealtest butter, melted
1 uncooked pie crust

Instructions
Preheat oven to 375º F.

In large saucepan over medium heat, cook spinach with a little water, about 5 minutes, until spinach is tender.

Drain well and chop finely.
|
|

Season with salt, pepper and garlic, and pour into crust.
|
|

|
Cover with shredded cheese.
|
|

|
Combine all ingredients for filling and stir to mix well; pour over spinach mixture.

Bake 35 to 40 minutes or until filling is firm and golden.
