Rotini with Bacon, Red Sweet Pepper and Peas

Ingredients
8 strips of smoked bacon, chopped
2 tbsp (30 ml) extra-virgin olive oil
1 clove garlic, finely chopped
1 red sweet pepper and green sweet pepper, in thin strips
1.25 cups (310 ml) frozen peas
1/2 cup (125 ml) dry white wine
1/2 cup (125 ml) 35% Sealtest, Ultracream or Country Style Whipping Cream
to taste; salt and fresh ground pepper
3 tbsp (45 ml) parsley, finely chopped
3 tbsp (500 g) rotini pasta, cooked
1/4 cup (60 ml) grated Parmesan cheese

Instructions

In a saucepan, brown bacon over medium heat. Drain
fat.

Over medium heat, add olive oil and cook garlic, peppers and peas for 5 minutes.

Stir in white wine, let simmer 3 minutes.
|

4.
|
Add cream; salt and pepper and let simmer another 5 minutes.
|
|
5.
|
Add parsley and pasta to sauce, toss well and arrange on plates.
|
|
6.
|
Sprinkle with Parmesan cheese and serve.
