Ingredients
1 cup (250 ml) dark brown sugar 1/4 cup (60 ml) Sealtest butter
1/4 cup (60 ml) corn syrup
2/3 cup (150 ml) Sealtest or Ultracream 35% Whipping
Cream
2 egg yolks
3 tbsp (30 ml) cornstarch - dissolved in 3 tbsp (45 ml) water
1 tsp (5 ml) vanilla

Preparation

In a saucepan over medium heat, melt brown sugar with butter and corn syrup; cook for 2 minutes, until slightly caramelized. Remove from heat.

In a bowl, stir together cream, egg yolks, dissolved cornstarch and vanilla; stir into caramel. |

Cook, beating, over medium heat until mixture thickens. Remove from heat immediately. |

Pour into jars, cool and refrigerate.
