Cold Avocado and Strawberry Soup

Ingredients
2 tbsp (30 ml) Sealtest butter
1 onion, finely chopped
2 celery branches, finely chopped
4 cups (1L) vegetable broth
2 ripe avocados, peeled, pitted and coarsely chopped 3/4 cup (175 ml) fresh strawberries, sliced
1 cup (250 ml) Sealtest 18% Table Cream or Ultra'cream 15%
2 tbsp (30 ml) lime juice
salt and pepper, to taste

Preparation

Melt butter in a saucepan over medium heat.

|
Add onion and celery; stir-fry 4-5 minutes.
|
|
3.
|
Top with vegetable broth.
|
|
4.
|
Simmer 10 minutes.
|
|
5.
|
Puree in blender until smooth.
|
|
6.
|
Return to saucepan.
|
|
7.
|
Puree avocados, strawberries, cream and lime juice.
|
|
8.
|
Blend to mixture in saucepan.
|
|
9.
|
Season to taste.
|
|
10.
|
Chill at least 2 hours.
|
