Vegetable Soup

Ingredients
2 tbsp (30 ml) Sealtest butter
3/4 cup (175 ml) chopped onion
1/2 cup (125 ml) carrots, cut into julienne strips
1/2 cup (125 ml) celery, cut into julienne strips
4 cups (1L) chicken broth
3/4 cup (175 ml) cubed potatoes
1/2 cup (125 ml) chopped, fresh tomatoes
1/4 tsp (1 ml) salt
1/2 tsp (2 ml) pepper
1 cup (250 ml) beets, cut into julienne strips
1/3 cup (85 ml) Sealtest sour cream
1/4 cup (60 ml) minced chives

Preparation

1.

In saucepan, melt butter; add onions, carrots and celery.

2.

Sauté over medium heat, a few minutes, until golden.

3.

Add chicken broth, potatoes, tomatoes, salt and pepper.

4.

Cook over low heat until vegetables are tender.


Garnish

1.

Warm beets and set aside.

2.

Serve hot in soup bowls, and garnish with beets, sour cream and chives.
