Ingredients
2 tbsp (30 ml) Sealtest butter 3/4 cup (175 ml) chopped onion 1/2 cup (125 ml) carrots, cut into julienne strips 1/2 cup (125 ml) celery, cut into julienne strips
4 cups (1L) chicken broth 3/4 cup (175 ml) cubed potatoes 1/2 cup (125 ml) chopped, fresh tomatoes 1/4 tsp (1 ml) salt 1/2 tsp (2 ml) pepper 1 cup (250 ml) beets, cut into julienne strips 1/3 cup (85 ml) Sealtest sour cream 1/4 cup (60 ml) minced chives

Preparation

In saucepan, melt butter; add onions, carrots and celery.
|

Sauté over medium heat, a few minutes, until golden.
|

Add chicken broth, potatoes, tomatoes, salt and pepper.
|
|

Cook over low heat until vegetables are tender.
|

Garnish
|
|

Warm beets and set aside.
|
|

Serve hot in soup bowls, and garnish with beets, sour cream and chives.
