Fennel Soup

Ingredients
1 tbsp (15 ml) Sealtest butter 1 large leek (2 cups/500 ml), sliced
2 celery stalks, sliced
2 fennel bulbs, cut into cubes
2 garlic cloves, minced
1.5 tsp (7 ml) fennel seeds
1/4 cup (60 ml) fresh parsley, chopped 2 cups (500 ml) chicken broth 2 cups (500 ml) milk

Preparation

In saucepan, melt butter; add vegetables, garlic, fennel seeds and parsley; sauté until soft, about 3 minutes.

Season with salt and pepper to taste, and add chicken broth.

Cook 15 minutes or until vegetables are tender.
|

|
Stir in milk and reheat.
|
|
5.
|
Place into food processor or blender; purée until smooth.
