Potatoes au Gratin

Ingredients
1 tbsp (15 ml) Sealtest butter
1 leek (white part only), minced
1 medium onion, chopped
1.5 cups (375 ml) Sealtest or Ultra'cream 10% cream
2.75 cups (675 ml) Swiss cheese, grated
1.5 tbsp (7 ml) ground curry
6 potatoes, peeled and thinly sliced 1 cup (250 ml) ham, diced 2 tbsp (30 ml) fresh parsley, chopped

Preparation

Melt butter in saucepan over medium heat.

Add leek and onion; cook 3-4 minutes.
|

In the same saucepan, add in cream and simmer 3-4 minutes.

Blend in 2 cups (500 ml) cheese and stir until melted.
|

|
Season with curry and blend thoroughly.
|

Set aside.

In a lightly-buttered square 8 inch (20 cm) baking dish, layer potatoes; cover with part of the sauce and diced ham.

Repeat until all potatoes have been used, with a final layer of sauce and ham.

Cover with aluminum foil and bake 45-50 minutes.
|

|
Uncover. Sprinkle with cheese and grill until cheese turns golden brown.
|

11.
|
Sprinkle with parsley just before serving.
|

TIP:
Replace ham with bacon and your choice of cold cuts.
