Crispy Cheddar

Ingredients
2 medium baking potatoes, scrubbed for brushing melted Sealtest butter to taste
salt and pepper
1.25 cups (300 ml) finely shredded cheddar cheese
6 slices of crispy bacon, crumbled 3 tbsp (45 ml) finely chopped green onion

Preparation
Preheat oven to 375º F.

Remove thin layer of peel at both ends of each potato.
|

Cut potatoes into 1/4 inch (6mm) thick slices.
|
|

|
Blot dry and place in a single layer on pre-buttered baking sheet.
|

|
Brush with melted butter; season with salt and pepper to taste.
|
|

|
Bake 10 minutes.
|

|
In small bowl, combine cheddar cheese, bacon and onion.
|

|
Sprinkle over potatoes with a spoon.
|
|
8.
|
Bake another 5 minutes or until cheese melts.
|
|
TIP:
Substitute Swiss, Oka or Saint-Paulin cheese for cheddar. Instead of bacon, try 1/2 cup (125 ml) finely chopped ham or finely sliced mushrooms, sautéed in butter.
