Pumpkin Soup

Ingredients
2 tbsp (30 ml) Sealtest butter
1 medium onion, chopped
2 cups (500 ml) peeled, cubed pumpkin
1 clove garlic, chopped
2 tbsp (30 ml) gingerroot, finely chopped
3 cups (750 ml) chicken broth or water
1/2 cup (125 ml) milk
salt and pepper
1 cup (250 ml) Sealtest 18% or Ultracream 15% Country
Style Cream

Preparation

In a saucepan, melt butter over medium heat and cook onion for 2 minutes.

Add pumpkin, garlic, gingerroot, chicken broth or water and milk; salt and pepper.
|

Cook over low heat for 30 minutes.
|
|

|
Puree in blender until smooth and return to saucepan.
|
|
5.
|
Stir in cream; reheat.
|
|
6.
|
Garnish with watercress to serve.
