Individual caramel latte cauliflower casseroles
Cauliflower is a vegetable that readily takes to sweet-salty combinations. Coated here with a smooth caramel latte flavoured-sauce, the pairing is especially tasty. These casseroles make an attractive side dish to savoury dishes such as grilled meat or fish. They add a warm, intimate touch to the table served individually. I like to surprise my guests’ palates with these sweet-salty mini-casseroles. It’s always fun to watch them try and guess the ingredients!
- Chop cauliflower into pieces and plunge into a large saucepan full of boiling water. Cook for 15 minutes or until they are tender.
- Meanwhile, in a saucepan, melt the butter for the sauce on high. Add the flour, mixing with a whisk. Gradually pour in the milk, continuing to whisk. Season with the salt and pepper, and cook on high for 4–5 minutes or until the sauce thickens. Set aside.
- When the cauliflower is cooked, drain it and then divide it among 4 ramekins 4” (10 cm) in diameter. Pour the sauce over the cauliflower and sprinkle with the cheese.
- Preheat the oven on broil. Cook the casseroles for 2–3 minutes or until the cheese is nicely browned.
