Individual caramel latte cauliflower casseroles

Cauliflower is a vegetable that readily takes to sweet-salty combinations. Coated here with a smooth caramel latte flavoured-sauce, the pairing is especially tasty. These casseroles make an attractive side dish to savoury dishes such as grilled meat or fish. They add a warm, intimate touch to the table served individually. I like to surprise my guests’ palates with these sweet-salty mini-casseroles. It’s always fun to watch them try and guess the ingredients!


  1. Chop cauliflower into pieces and plunge into a large saucepan full of boiling water. Cook for 15 minutes or until they are tender.
  2. Meanwhile, in a saucepan, melt the butter for the sauce on high. Add the flour, mixing with a whisk. Gradually pour in the milk, continuing to whisk. Season with the salt and pepper, and cook on high for 4–5 minutes or until the sauce thickens. Set aside.
  3. When the cauliflower is cooked, drain it and then divide it among 4 ramekins 4” (10 cm) in diameter. Pour the sauce over the cauliflower and sprinkle with the cheese.
  4. Preheat the oven on broil. Cook the casseroles for 2–3 minutes or until the cheese is nicely browned.
