Lemon, dill and saffron butter

I love to melt a little of this butter on salmon that’s just come out of the oven to intensify its flavour. It’s also ideal on dishes that accompany seafood or tuna sandwiches.

Preparation

  1. In a large mixing bowl, combine all ingredients and stir with a whisk.
  2. Transfer the butter to a glass jar or small dish and keep refrigerated until serving time.
