Maple Endive Soup
The sweet taste of maple softens the bitterness of the endives in this delicious soup.
- Place all ingredients except maple milk in a saucepan and bring to a boil. Turn heat down to low and cook 30 minutes, uncovered.
- Remove from heat. Using an electric mixer or hand blender, blend soup until smooth. Add heated maple milk and stir to blend.
- Salt and pepper to taste and serve.
