Maple Endive Soup

The sweet taste of maple softens the bitterness of the endives in this delicious soup.


  1. Place all ingredients except maple milk in a saucepan and bring to a boil. Turn heat down to low and cook 30 minutes, uncovered.
  2. Remove from heat. Using an electric mixer or hand blender, blend soup until smooth. Add heated maple milk and stir to blend.
  3. Salt and pepper to taste and serve.
