Sweet potato and lentil soup


  1. Heat the oil in a large pot. Add the sweet potatoes and cook for 4 to 5 minutes.
  2. Add the onions and cook for 1 minute.
  3. Add the milk and simmer for 15 minutes, stirring occasionally, or until sweet potatoes are tender.
  4. Transfer the soup to a blender and purée until smooth.
  5. Pour the soup back into the pot and bring to a simmer.
  6. Add the parsley and lentils. Season with salt and pepper, and serve.
