Sweet potato and lentil soup
- Heat the oil in a large pot. Add the sweet potatoes and cook for 4 to 5 minutes.
- Add the onions and cook for 1 minute.
- Add the milk and simmer for 15 minutes, stirring occasionally, or until sweet potatoes are tender.
- Transfer the soup to a blender and purée until smooth.
- Pour the soup back into the pot and bring to a simmer.
- Add the parsley and lentils. Season with salt and pepper, and serve.
